Our family farm, founded over 35 years ago by our father, Ricardo Ibarra, is dedicated to producing exceptional coffee, but also to preserving and respecting the environment. From the very beginning, we have maintained a natural reserve on the farm that remains untouched to this day. While the farm spans a larger area, we only actively work on 180 hectares, ensuring that the natural ecosystem continues to thrive.

Our coffee offerings are designed to enhance your HOUSEWIFE ROAST dining experience, sparking conversation and delight in every cup.
In this light, we are excited to introduce ‘Bayunka’ from Finca Nuevo México (La Concordia, Chiapas, Mexico), roasted by Prolog (Copenhagen, Denmark).
This remarkable farm has a long history rooted in quality, innovation, and sustainability. It started in 1964 when German immigrant Don Ricardo Baumann founded Finca Nuevo México after working on coffee plantations in the Soconusco region. When he passed in 1974, his daughter Ilse Baumann took over and encouraged her son Ricardo Ibarra to pursue agronomy to carry on the family legacy.
In 1986, Ricardo Ibarra transformed the farm from a neglected property into a highly productive and innovative coffee producer. Under his leadership, Finca Nuevo México expanded its plantations, reaching record production by 2016. Today, his sons Carlos and Ricardo Jr. continue to uphold their family’s commitment to quality and sustainability.
One of the farm’s most impressive features is its dedication to environmental responsibility. Out of its 460 hectares, a significant portion remains untouched to preserve biodiversity. They also use renewable hydroelectric energy and compost coffee pulp to enrich the soil.
Prolog has roasted their ‘Bayunka’ lot for us, a beautiful combination of Tupi, Caturra, Obata, and Catimor varieties, grown at 1.110 – 1.420 meters above sea level and processed with a semi-washed anaerobic method. Resulting in a well-structured, approachable cup with notes of baked apple, walnut, and cocoa nibs.
